Ingredients:

  • 1 lb beef stew meat (or chuck roast, cut into cubes)
  • 1 lb smoked sausage (such as kielbasa or Andouille), sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 2 cups carrots, peeled and sliced
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (14 oz) beef broth (or vegetable broth)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley (for garnish, optional)

Instructions:

1. Brown the Meat

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and smoked sausage slices. Cook until the beef is browned on all sides, about 5-7 minutes, and the sausage has released some of its oils and slightly caramelized. Once browned, remove the meat from the pot and set it aside.

2. Sauté the Aromatics

In the same pot, add the chopped onion and sauté for about 3-4 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant.

3. Add the Vegetables

Add the diced potatoes and sliced carrots to the pot. Stir well to combine with the onions and garlic. Let them cook for about 5 minutes, allowing them to lightly brown and start to soften.

4. Combine the Stew Ingredients

Return the browned beef and sausage to the pot. Then, add the diced tomatoes (with juice), pinto beans, corn, and beef broth. Stir everything together and bring it to a simmer. Add the chili powder, cumin, smoked paprika, red pepper flakes (if using), and season with salt and pepper to taste.

5. Simmer the Stew

Once everything is combined and brought to a simmer, reduce the heat to low. Cover the pot and let the stew cook for about 1 to 1.5 hours, stirring occasionally. The flavors will meld together, and the vegetables will become tender. You’ll know the stew is ready when the potatoes are soft, and the beef has become tender and flavorful.

6. Adjust the Seasoning

Once the stew is done cooking, taste it and adjust the seasonings if needed. You may want to add more salt, pepper, or chili powder for extra spice, depending on your taste.

7. Serve and Garnish

Ladle the Hearty Texas Cowboy Stew into bowls and garnish with fresh cilantro or parsley, if desired. Serve hot, and enjoy the rich, smoky flavors!
