- 1/2 cup unsalted butter, divided

Step 1: Prepare the Lobster Tails
Start by thawing the lobster tails if they’re frozen. To prepare them, use a sharp pair of kitchen scissors or a knife to cut the top shell lengthwise, down the center. Once you’ve cut through the shell, gently pull the lobster meat up and out, leaving the tail end attached to the shell (this gives it a beautiful presentation). Use your fingers to loosen the lobster meat from the shell, but be careful not to detach it completely. You can also remove the “vein” (digestive tract) if visible.
Season the lobster meat with salt and pepper on both sides.
Step 2: Cook the Lobster Tails
Preheat your oven’s broiler on high. Line a baking sheet with aluminum foil for easy cleanup and place the lobster tails on it, cut side up.
