Ingredients for Quiche Lorraine:

For the crust:

  • 1 package of store-bought pie crust (or homemade if you prefer)

For the filling:

  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 ½ cups grated Gruyère cheese (or Swiss cheese)
  • 1 cup crispy cooked bacon, crumbled (about 6 strips)
  • 1 medium onion, finely chopped
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground nutmeg (optional, for a hint of warmth)
  • 1 tablespoon butter (for sautéing the onions)
  • 1 tablespoon fresh parsley (for garnish, optional)

Instructions:

Step 1: Prepare the Crust

Begin by preheating your oven to 375°F (190°C). If you’re using store-bought pie crust, simply place it into a 9-inch tart or pie pan, pressing it into the bottom and up the sides. Use a fork to prick a few holes in the bottom to prevent the crust from puffing up during baking.

If you’re using homemade pie crust, make sure it’s chilled and pre-rolled to fit your tart pan, then follow the same steps. You can also blind-bake the crust for about 10 minutes with pie weights or dried beans to prevent it from becoming soggy.

Step 2: Cook the Bacon and Sauté the Onion

In a large skillet over medium heat, cook the bacon strips until they’re crispy, about 6-7 minutes. Remove them from the skillet, let them cool, and then crumble them into bite-sized pieces.

In the same skillet, use the bacon fat to sauté the chopped onion for about 5 minutes, or until they are soft and translucent. If there’s not enough bacon fat, feel free to add a little butter. Once the onions are soft, remove them from the heat and set aside.

Step 3: Make the Quiche Custard

In a large mixing bowl, whisk together the eggs, heavy cream, and milk until smooth. Add the salt, black pepper, and nutmeg (if using). Stir in the grated Gruyère cheese and the crumbled bacon, followed by the sautéed onions.

Step 4: Assemble the Quiche

Pour the egg mixture into the prepared pie crust, making sure it’s evenly distributed. Use a spoon to gently spread out the bacon and onion so that they’re evenly distributed throughout the custard.

Step 5: Bake the Quiche

Carefully place the assembled quiche into the oven and bake for 35-40 minutes, or until the center is set and the top is golden brown. You can check for doneness by gently shaking the pan—the center should not jiggle.

If the edges of the crust start to brown too much during baking, you can cover them with a strip of aluminum foil to prevent burning.
