What Is a Turtle Cake?

Turtle Cake takes its name from the classic Turtle candies, which are typically made with pecans, caramel, and chocolate. The cake version captures those same flavors but in the form of a rich chocolate cake, layered with gooey caramel sauce, toasted pecans, and sometimes chocolate chips for extra decadence. It’s moist, slightly chewy, and incredibly indulgent.

Ingredients

For the Cake:

  • 1 box devil’s food cake mix
  • 1/2 cup evaporated milk
  • 1/2 cup unsalted butter, melted
  • 1 cup chopped pecans
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup evaporated milk (additional for caramel mixture)

For the Caramel Filling:

  • 1 package (14 oz) caramels, unwrapped (or 1 cup caramel sauce)
  • 1/3 cup heavy cream or evaporated milk

Optional Toppings:

  • Extra caramel drizzle
  • Extra chocolate drizzle
  • A pinch of sea salt
  • Vanilla ice cream for serving

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.

Step 2: Prepare the Cake Batter

In a large mixing bowl, combine the cake mix, 1/2 cup evaporated milk, and melted butter. Mix until the batter is thick and smooth—it will be denser than your typical cake batter. Divide the batter in half.

Step 3: Bake the First Layer

Spread half of the batter evenly into the prepared pan. Bake for 10 minutes, just enough to set the bottom layer.

Step 4: Prepare the Caramel Filling

While the first layer bakes, melt the caramels with 1/3 cup cream in a saucepan over low heat, stirring frequently until smooth. (Alternatively, warm store-bought caramel sauce in the microwave until pourable.)

Step 5: Layer the Filling

Once the bottom layer has baked for 10 minutes, remove the pan from the oven. Immediately pour the caramel mixture evenly over the warm cake layer. Sprinkle with chopped pecans and chocolate chips.

Step 6: Add the Top Layer

Drop spoonfuls of the remaining cake batter over the caramel and pecans. Use a spatula to gently spread it out as evenly as possible. It’s okay if a bit of caramel peeks through.

Step 7: Bake Again

Return the cake to the oven and bake for an additional 20–25 m
