Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon cumin
For the Burrito:
- 4 large flour tortillas
- 1 ripe avocado, sliced
- 1 cup shredded cheese (cheddar or Mexican blend works well)
- 1 cup fresh lettuce, shredded
- 1/2 cup diced tomatoes
- 1/4 cup red onion, finely chopped (optional)
- 1/4 cup cilantro, chopped (optional)
- 1/3 cup ranch dressing (use more or less depending on your preference)
Instructions
1. Cook the Chicken
Start by seasoning your chicken breasts with salt, pepper, garlic powder, onion powder, paprika, and cumin. Rub the seasonings evenly over the chicken to ensure it’s well-coated.
Next, heat the olive oil in a large skillet over medium heat. Once the pan is hot, add the chicken breasts and cook for 6-7 minutes per side, or until the chicken is fully cooked through and has an internal temperature of 165°F (75°C).
Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Then, shred the chicken into bite-sized pieces using two forks or chop it into small cubes. Set aside.
2. Assemble the Burritos
Warm the flour tortillas in a dry skillet or microwave for 10-15 seconds to make them easier to roll.
Place the warm tortilla on a flat surface. In the center of the tortilla, layer the following ingredients:
- A generous spoonful of the shredded chicken
- A few slices of creamy avocado
- A handful of shredded lettuce
- A spoonful of diced tomatoes
- A sprinkle of red onion (if using)
- A drizzle of ranch dressing for extra flavor
- A sprinkle of fresh cilantro and cheese (optional)
