Salt and pepper to taste
Instructions:
Prepare the Chicken: Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off any excess.
Cook the Chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 4-5 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the Sauce: In the same skillet, add the lemon juice, chicken broth, and capers. Scrape any browned bits from the bottom of the skillet with a wooden spoon. Bring the sauce to a simmer and cook for 2-3 minutes to thicken slightly.
Finish and Serve: Return the chicken to the skillet, spooning the sauce over it. Let the chicken simmer in the sauce for 2 minutes. Garnish with fresh parsley and serve immediately.
4. Honey Mustard Chicken Thighs
For a simple, tangy, and slightly sweet chicken recipe that rivals anything you’d find at a restaurant, honey mustard chicken thighs are a great option. The marinade infuses the chicken with flavor while keeping it moist and juicy.
Ingredients:
6 bone-in, skin-on chicken thighs
1/4 cup Dijon mustard
2 tablespoons honey
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
Instructions:
Make the Marinade: In a bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper.
Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure the pieces are well-coated. Let the chicken marinate in the refrigerator for at least 1 hour, or up to 6 hours for more flavor.
Cook the Chicken: Preheat the oven to 400°F (200°C). Heat a large oven-safe skillet over medium-high heat. Place the chicken thighs, skin-side down, in the skillet and sear for 5-6 minutes, until the skin is crispy. Flip the chicken over and transfer the skillet to the oven.
Roast: Roast the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
Serve: Serve the honey mustard chicken thighs with roasted vegetables, rice, or a side salad.
