#### Step 2: Sear the Pork Chops
In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, carefully add the pork chops to the skillet. Let them cook for about 4-5 minutes on each side, or until they are nicely browned and caramelized. The goal here is to create a beautiful, crispy exterior. You want the pork chops to develop a rich golden-brown crust, which will help lock in the juices and create flavor.
Once both sides are seared, remove the pork chops from the skillet and set them aside on a plate. You can cover them loosely with foil to keep them warm.
#### Step 3: Prepare the Glaze
In the same skillet, reduce the heat to medium. Add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant. Be careful not to burn the garlic, as it can turn bitter.
Next, add the **soy sauce**, **apple cider vinegar**, **Dijon mustard**, and **brown sugar** to the pan. Stir everything together, scraping up any bits of pork that may have stuck to the bottom of the skillet—those bits are packed with flavor! Let the mixture simmer for about 3-5 minutes, or until the sugar has fully dissolved and the glaze has thickened slightly.
Add the **ground cinnamon** and **ginger** to the mixture and stir well. Taste the sauce and adjust seasoning if necessary, adding a little more soy sauce or sugar depending on whether you want it sweeter or saltier.
#### Step 4: Return the Pork Chops to the Skillet
Once the glaze has thickened, return the pork chops to the skillet. Spoon some of the sauce over the top of the pork chops, then cover the skillet with a lid. Let the pork chops cook for an additional 5-7 minutes, depending on the thickness of the chops. This will allow the pork to cook through while absorbing the delicious glaze. The pork should reach an internal temperature of 145°F (63°C) to be fully cooked.
As the pork chops simmer in the glaze, the brown sugar will caramelize, creating a sticky, glossy layer that coats the meat. The combination of the pork’s natural juiciness and the sweet, tangy glaze will make every bite a delight.
#### Step 5: Serve
Once the pork chops are cooked through, remove them from the skillet and place them on a serving platter. Spoon any remaining glaze from the skillet over the top. Garnish with chopped fresh parsley, green onions, or sesame seeds if desired.
Serve the brown sugar chops with your favorite sides. They go wonderfully with mashed potatoes, steamed vegetables, or a simple salad. The rich, sweet, and savory flavors are sure to be a hit with everyone at the table.
