Cajun Chicken And Broccoli Alfredo

### **Instructions:**

#### **Step 1: Season and Cook the Chicken**
1. **Prepare the chicken**: Season both sides of the chicken breasts with Cajun seasoning, salt, and pepper. You can add extra Cajun seasoning if you want more heat, but keep in mind that the Alfredo sauce will balance out the spice.

2. **Cook the chicken**: Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot, place the chicken breasts in the skillet. Cook for about 6-7 minutes on each side until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Once done, remove the chicken from the skillet and let it rest for a few minutes. Then, slice the chicken into thin strips or bite-sized pieces.

#### **Step 2: Cook the Broccoli**
1. **Steam the broccoli**: If you’re using fresh broccoli, cut it into florets. In a separate pot, bring a small amount of water to a boil and steam the broccoli for about 4-5 minutes until it’s tender but still crisp. If you prefer a faster method, you can also use frozen broccoli and steam it according to the package directions.

2. **Sauté the broccoli**: Once the broccoli is cooked, heat olive oil in a pan over medium heat. Add the steamed broccoli, and sauté for 1-2 minutes, seasoning with salt and pepper to taste. Set aside.

#### **Step 3: Make the Alfredo Sauce**
1. **Melt the butter**: In the same skillet you used for the chicken, melt the butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, but be careful not to burn the garlic.

2. **Add the cream**: Pour in the heavy cream and chicken broth. Bring the mixture to a simmer, stirring occasionally. Let it simmer for about 3-4 minutes to thicken slightly.

3. **Add the cheese**: Lower the heat and gradually stir in the grated Parmesan cheese until it melts into the sauce. Season with salt and pepper to taste. If you prefer a thicker sauce, you can simmer it a little longer, or if you like a thinner sauce, add a splash more chicken broth.

#### **Step 4: Cook the Pasta**
1. **Cook the fettuccine**: While you’re preparing the sauce, bring a large pot of salted water to a boil and cook the fettuccine pasta according to package instructions. Once the pasta is al dente, drain and set aside. Make sure to reserve a small cup of pasta water in case you need to thin the sauce later.

#### **Step 5: Combine Everything**
1. **Toss pasta with sauce**: Add the cooked fettuccine pasta to the skillet with the Alfredo sauce. Toss the pasta to coat it evenly in the creamy sauce. If the sauce is too thick, you can add a little bit of the reserved pasta water to loosen it up.

2. **Add the chicken and broccoli**: Gently fold the cooked Cajun chicken and sautéed broccoli into the pasta and sauce. Stir everything together until well combined and the chicken and broccoli are evenly distributed.
