## **How to Make Cheese-Stuffed Potato Bombs**

### **Step 1: Prepare the Potatoes**

Start by peeling and dicing the potatoes into chunks. The smaller you chop them, the faster they’ll cook. Place them in a large pot and cover them with cold water. Add a pinch of salt to the water, then bring it to a boil. Allow the potatoes to cook for about 10-15 minutes, or until they’re tender and easily pierced with a fork.

Once the potatoes are done, drain them and return them to the pot. Mash them until smooth, adding butter and a little milk to create a creamy texture. Season with salt, pepper, garlic powder, and any other seasonings of your choice.

### **Step 2: Add the Cheese**

While the mashed potatoes are still warm, stir in your cheese. If you’re using a combination of cheeses, mix them in gradually so they melt evenly throughout the potatoes. The heat from the mashed potatoes will help the cheese melt and incorporate smoothly into the mixture.

Next, create a small indentation in the center of each potato ball and stuff it with a small cube or tablespoon of cheese. Pinch the edges of the potato ball to seal the cheese inside, ensuring that the filling doesn’t escape during cooking.

### **Step 4: Coat the Potato Bombs**

To create a crispy outer layer, you’ll need to coat the potato bombs in breadcrumbs. First, beat an egg in a shallow dish. In another dish, add the breadcrumbs. Dip each potato bomb into the egg, then roll it in the breadcrumbs until fully coated.

If you like extra crunch, you can double-coat the potato bombs by dipping them in egg and breadcrumbs a second time.

### **Step 5: Fry the Potato Bombs**

Now it’s time to cook the potato bombs. Heat a few inches of oil in a deep fryer or large skillet over medium-high heat. The oil should be hot enough to fry the potato bombs, around 350°F (175°C). Carefully drop the potato bombs into the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for 2-3 minutes, or until the potato bombs are golden brown and crispy on all sides.

Use a slotted spoon to remove the potato bombs from the oil and place them on a paper towel-lined plate to drain any excess oil.
