Cinnamon Sugar Churros with Rich Chocolate Sauce

### **Step 2: Heat the Oil for Frying**

1. In a deep frying pan or a large saucepan, pour enough **vegetable oil** to submerge the churros. You’ll need about 2-3 inches of oil in the pan.

2. Heat the oil over medium-high heat to around 350°F (175°C). Use a candy thermometer to ensure the oil is at the right temperature. If the oil is too hot, the churros will burn on the outside before cooking through, and if it’s too cold, the churros will be greasy.

### **Step 3: Pipe and Fry the Churros**

1. Transfer the churro dough to a piping bag fitted with a large star tip. This will give your churros the signature ridged shape.

2. Carefully pipe 3 to 4-inch long strips of dough directly into the hot oil. Use scissors or a knife to cut the dough once it has been piped out to the desired length.

3. Fry the churros in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, turning them with tongs, until they are golden brown and crispy.

4. Once fried, use tongs to remove the churros from the oil and transfer them to a wire rack or a plate lined with paper towels to drain the excess oil.

### **Step 4: Coat the Churros in Cinnamon Sugar**

1. In a small bowl, combine the **granulated sugar** and **cinnamon**. Mix well until the cinnamon is evenly distributed in the sugar.

2. While the churros are still warm, roll them in the cinnamon sugar mixture until they are fully coated. This adds that signature sweet and spicy flavor to the churros.

### **Step 5: Make the Rich Chocolate Sauce**

1. In a small saucepan, heat the **heavy cream** over medium heat until it starts to simmer. Be careful not to bring it to a boil.

2. Once the cream is simmering, remove the saucepan from the heat and add the **chocolate** (either chips or chopped bar), stirring continuously until the chocolate is fully melted and smooth.

3. Stir in the **butter** and **vanilla extract** for added richness and flavor. The chocolate sauce should be thick, smooth, and glossy.

4. Transfer the chocolate sauce to a small bowl for dipping.

### **Step 6: Serve and Enjoy**

Serve the warm churros with the rich chocolate sauce on the side for dipping. The churros are best enjoyed fresh and warm, but they can also be stored for a day or two in an airtight container if you want to enjoy them later.
