Ingredients:

For the beef filling:

  • 1 lb (450g) ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon cayenne pepper (optional, for extra spice)
  • 1/2 cup diced tomatoes (fresh or canned)
  • 1/4 cup beef broth (or water)
  • 1 tablespoon tomato paste (optional, for a richer flavor)

For the wrap:

  • 4-6 large flour tortillas (or corn, depending on preference)
  • 1 cup shredded lettuce or mixed greens
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup salsa or pico de gallo (optional)
  • Sliced avocado or guacamole (optional)

Instructions:

1. Cook the Beef:

Heat a tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds, or until fragrant.

Add the ground beef to the skillet and break it up with a wooden spoon. Cook until the beef is browned and fully cooked through, about 5-7 minutes. Drain any excess fat if necessary.

2. Season the Beef:

Once the beef is cooked, add the chili powder, cumin, smoked paprika, black pepper, salt, and cayenne pepper (if using). Stir well to coat the meat evenly with the spices.

Add the diced tomatoes, beef broth, and tomato paste (if using). Stir the mixture to combine and bring it to a simmer. Let it cook for an additional 5-7 minutes, until the sauce thickens slightly and the flavors meld together. Taste and adjust seasoning as needed.

3. Prepare the Tortillas:

While the beef filling is cooking, warm the tortillas. You can do this in a dry skillet over medium heat for 30 seconds on each side or microwave them for about 20-30 seconds to make them soft and pliable.
