Creamy Potato and Pea Salad with Bacon

### Ingredients:

– 2 lbs baby potatoes (or Yukon Gold potatoes)
– 1 cup frozen peas, thawed (or fresh peas if you prefer)
– 6 strips of bacon, cooked and crumbled
– 1/2 cup mayonnaise
– 1/4 cup sour cream
– 1 tablespoon Dijon mustard
– 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
– 1 tablespoon red wine vinegar
– Salt and pepper to taste
– 1 small red onion, finely chopped (optional, for extra flavor)
– 1 tablespoon olive oil (for cooking the bacon, optional)

### How to Make Creamy Potato and Pea Salad with Bacon

**Step 1: Cook the Potatoes**

Start by washing and cutting the potatoes into bite-sized pieces. If you’re using baby potatoes, you can cut them in halves or quarters, depending on their size. Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring the water to a boil. Cook the potatoes for 10-12 minutes, or until they are fork-tender but not mushy. Drain the potatoes and set them aside to cool slightly.

**Step 2: Cook the Bacon**

While the potatoes are cooking, heat a skillet over medium heat. Add the bacon strips and cook until they are crispy and golden brown, about 5-7 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain the excess fat. Once cooled, crumble the bacon into small pieces. If you prefer, you can also cook the bacon in the oven at 400°F (200°C) for about 15-20 minutes for an easier, hands-off approach.

**Step 3: Prepare the Dressing**

In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, red wine vinegar, and chopped dill. Stir until smooth and well combined. Taste the dressing and season with salt and pepper to your liking. You can also add a little extra Dijon mustard if you prefer more tang.

**Step 4: Assemble the Salad**

Once the potatoes are cool enough to handle, add them to the bowl with the dressing. Gently toss the potatoes in the creamy dressing until they are well-coated. Then, add the thawed peas and crumbled bacon. If you’re using red onion, add it to the salad as well for an extra layer of flavor. Give everything a final gentle toss to combine.
