Instructions:
Step 1: Prepare the Vegetables
Start by grating the zucchini and carrots. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. Zucchini tends to release a lot of water when grated, and removing it will help ensure your fritters turn out crispy rather than soggy.
Next, chop the onion finely, and if you’re using peas, defrost them or chop them into smaller pieces.
Step 2: Make the Fritter Batter
In a large mixing bowl, combine the grated zucchini, grated carrots, chopped onion, and peas (if using). Add the fresh parsley, flour, baking powder, salt, pepper, and any optional spices like garlic powder or cumin. Crack the eggs into the bowl and stir everything together until well combined.
