Instructions

  1. Add to crockpot: Place potatoes, broccoli, onion, garlic, broth, and seasonings in the crockpot.
  2. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes and broccoli are very tender.
  3. Blend (optional): For a smoother texture, use an immersion blender to puree part or all of the soup. Or leave it chunky for a rustic feel.
  4. Add cream and cheese: Stir in heavy cream and shredded cheddar. If you prefer a thicker soup, stir in the cornstarch slurry and cook for another 10–15 minutes on high until thickened.
  5. Serve: Taste and adjust seasoning. Ladle into bowls and garnish with extra cheese, crumbled bacon, or green onions if desired.

Tips & Variations

  • Make it vegetarian: Use vegetable broth and skip any meat-based toppings.
  • Want extra protein? Add cooked, shredded chicken or chopped ham.
  • Add a kick: Stir in a pinch of cayenne or top with hot sauce.
  • Use frozen veggies: Frozen broccoli works great if fresh isn’t on hand.
