**Instructions:**
1. **Prepare the Chicken**: Begin by cutting a small pocket into each chicken breast. Be careful not to cut all the way through—just enough space to stuff the filling.
2. **Prepare the Filling**: In a bowl, mix together the hot sauce and cream cheese to create a spicy cheese filling. You can add extra cayenne pepper if you prefer more heat.
3. **Stuff the Chicken**: Take a slice of cheddar cheese and spoon some of the spicy cream cheese mixture into the pocket of each chicken breast. Close the pocket and secure it with toothpicks.
4. **Coating the Chicken**: In one bowl, whisk together eggs, salt, pepper, and garlic powder. In another bowl, mix the flour with paprika, cayenne pepper, onion powder, and breadcrumbs.
5. **Frying the Chicken**: Heat vegetable oil in a deep frying pan or large skillet over medium-high heat. Once the oil is hot, carefully dip each stuffed chicken breast in the egg wash, then coat it with the seasoned flour and breadcrumb mixture.
6. **Fry the Chicken**: Fry the chicken breasts for 6-8 minutes on each side, or until they are golden brown and crispy. The internal temperature should reach 165°F (74°C) to ensure the chicken is fully cooked.
7. **Serve**: Once fried, let the chicken rest for a few minutes. When you cut into the chicken, the molten cheese and spicy sauce should flow out, giving the dish its signature “lava” effect.
