#### **Step 1: Prepare the Chicken**
Start by preparing the chicken breasts. You can lightly pound the chicken to an even thickness to ensure even cooking. Season both sides with salt and pepper. In one shallow dish, place the flour. In another, beat the eggs. In a third dish, mix the breadcrumbs, garlic powder, paprika, and parmesan cheese.

Coat each chicken breast first in flour, then dip it into the beaten eggs, and finally coat it in the breadcrumb mixture, pressing gently to ensure the crumbs stick well. This will create a golden, crispy crust once fried.

#### **Step 2: Cook the Chicken**
Heat the olive oil and butter in a large skillet over medium heat. Once the oil is hot and shimmering, add the breaded chicken breasts to the skillet. Cook for 4-5 minutes on each side, or until the chicken is golden brown and cooked through (an internal temperature of 165°F or 75°C). Once cooked, remove the chicken from the skillet and place it on a paper towel-lined plate to drain any excess oil.

In the same skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until the onions are translucent and fragrant.

Add the sliced mushrooms to the skillet, cooking for 5-7 minutes, until they release their moisture and begin to brown. Stir occasionally to prevent burning.

Once the mushrooms are browned, pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes, allowing the liquid to reduce slightly.

Next, add the heavy cream and grated parmesan cheese. Stir well to combine, and let the sauce simmer for another 2-3 minutes, until it thickens to a creamy consistency. Taste and adjust seasoning with salt and pepper as needed.

#### **Step 4: Assemble and Serve**
Place the crispy chicken breasts on serving plates, and spoon the rich, creamy parmesan mushroom sauce over the top of each. Garnish with freshly chopped parsley for a burst of color and a touch of freshness.
