## 👩🍳 How to Make It
### Step 1: Sauté the aromatics
Heat olive oil in a large pot. Add onion, garlic, carrots, and celery. Sauté over medium heat until softened and fragrant, about 5–7 minutes.
### Step 2: Add the rest of the vegetables
Stir in potatoes, zucchini, green beans, and diced tomatoes (with juices). Pour in the vegetable broth. Season with thyme, oregano, salt, and pepper.
### Step 3: Simmer
Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, or until vegetables are tender.
### Step 4: Stir in the peas (or corn)
Add frozen peas during the last 5 minutes of cooking. Taste and adjust seasoning as needed.

### While the soup simmers… make the croutons!
### Step 5: Bake the croutons
Preheat oven to 375°F (190°C). Toss bread cubes with olive oil, garlic powder, and salt. Spread on a baking sheet and bake for 8–10 minutes. Remove, sprinkle with Parmesan, and bake for 2–3 more minutes until golden and crispy.
