### Step-by-Step Recipe for Hearty Lentil and Mushroom Soup
#### Ingredients:
– 1 cup dried lentils (brown or green), rinsed
– 2 cups mushrooms, sliced (button, cremini, or your choice)
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 1 can (14.5 oz) diced tomatoes, or 2 fresh tomatoes, chopped
– 6 cups vegetable broth (or more, depending on your preferred consistency)
– 2 tbsp olive oil
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1 bay leaf
– 1 tsp cumin (optional)
– Salt and pepper to taste
– 1 tbsp lemon juice (optional)

1. **Prepare the Ingredients**:
– Rinse the lentils in cold water to remove any debris. Set them aside.
– Slice the mushrooms, dice the carrots and celery, and chop the onion and garlic.
