### Step-by-Step Instructions for Making Breakfast Rolls

#### Step 1: Prepare the Yeast Mixture
Start by preparing the yeast mixture, as this is a crucial step to ensuring your rolls rise properly. In a small bowl, combine 1/4 cup of warm water (around 110°F or 43°C) with 1/4 cup of sugar. Stir until the sugar dissolves, then sprinkle 2 1/4 teaspoons of active dry yeast over the top of the water. Let it sit for about 5 to 10 minutes. You’ll notice that the mixture will start to bubble and foam. This means the yeast is active and ready to go.

#### Step 2: Mix the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center of the flour mixture and pour in the yeast mixture, warm milk, melted butter, and the egg. Stir everything together using a wooden spoon or spatula until a rough dough forms. At this point, the dough will look a bit shaggy, but don’t worry! That’s normal.

#### Step 3: Knead the Dough
Transfer the dough onto a lightly floured surface and begin kneading. Knead the dough for about 8-10 minutes, adding small amounts of flour if necessary, until the dough becomes smooth and elastic. If you’re using a stand mixer, you can use the dough hook attachment to knead the dough for you on low speed for about 5-6 minutes.

#### Step 4: Let the Dough Rise
Once the dough is kneaded, form it into a ball and place it into a lightly greased bowl. Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size. This is the first rise, which helps develop the fluffy texture of the rolls.

#### Step 5: Shape the Rolls
After the dough has risen, punch it down to release the air bubbles. Turn the dough out onto a lightly floured surface and roll it into a large rectangle, about 1/2 inch thick. For a simple version, you can cut the dough into 12 equal squares or rectangles. For a more traditional round shape, roll the dough into a log and cut it into 12 equal pieces.

#### Step 6: Second Rise
Place the shaped rolls into a greased 9×13-inch baking dish or onto a baking sheet. Leave a little space between each roll. Cover the rolls loosely with a kitchen towel and let them rise again for about 30-45 minutes, or until they’ve puffed up.

#### Step 7: Preheat the Oven
While the rolls are rising, preheat your oven to 350°F (175°C). This is the ideal temperature to bake the rolls, ensuring they cook evenly and develop that golden, slightly crisp exterior while staying soft on the inside.

#### Step 8: Bake the Rolls
Once the rolls have finished their second rise, brush the tops with a little melted butter for extra flavor and a beautiful golden finish. Place the rolls in the preheated oven and bake for 20-25 minutes, or until they are golden brown on top. The smell of fresh-baked rolls will begin to fill your kitchen as they bake, making the wait all the more exciting.

Step 9: Let Cool and Serve
Once the rolls are baked, remove them from the oven and allow them to cool for a few minutes. Serve them warm with your favorite spread, whether it’s butter, jam, or even a savory topping like cream cheese or cheese and herbs.
