Step 3: Roll & Fill
On a floured surface, roll out one portion of dough into a rectangle (about 1/8 inch thick). Spread a thin layer of the nut mixture over the dough, leaving a small border around the edges.
Roll the dough jelly-roll style, starting from the long side. Place seam-side down on a baking sheet lined with parchment. If desired, brush with egg wash.
Step 4: Slice & Bake
Using a sharp knife, slice into 1-inch cookies (you can bake the log whole too and slice after baking if preferred). Bake at 350°F (175°C) for 15–20 minutes, or until lightly golden.
Let cool on the tray before transferring to a wire rack.
