Ingredients You’ll Need
To make meatball soup, you’ll need the following ingredients:
For the Meatballs:
- 1 lb ground beef (you can also use a mix of beef and pork for extra flavor)
- 1/4 cup breadcrumbs (preferably fresh or Italian-style)
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional, for extra flavor)
For the Soup:
- 2 tablespoons olive oil (for sautéing)
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 6 cups beef broth (or chicken broth for a lighter option)
- 1 can (14.5 oz) diced tomatoes, with juice
- 1 bay leaf
- 1 teaspoon dried Italian seasoning (or a mix of oregano, thyme, and basil)
- Salt and pepper, to taste
- 2 cups frozen peas (or fresh if you prefer)
- 2 cups uncooked pasta (small pasta like elbow macaroni or ditalini works best)
- Fresh parsley for garnish (optional)
Instructions
Step 1: Make the Meatballs
- Combine the ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, pepper, and fresh parsley (if using). Mix until everything is evenly incorporated. Be careful not to overwork the mixture, or the meatballs may become tough.
- Shape the meatballs: Using your hands, roll the meat mixture into small meatballs, about 1 to 1 ½ inches in diameter. You should get around 20-25 meatballs, depending on their size.
Step 2: Brown the Meatballs
- Heat the oil: In a large soup pot, heat the olive oil over medium heat.
- Brown the meatballs: Working in batches, add the meatballs to the pot and brown them on all sides, about 5-7 minutes. Don’t worry about cooking them through at this point; the goal is just to get a nice golden-brown crust on the outside.
- Remove and set aside: Once browned, remove the meatballs from the pot and set them aside. They will finish cooking in the soup later.
