### Ingredients:
– **1 lb (450g) lean ground beef**
– **1 large onion**, finely chopped
– **1 red bell pepper**, diced
– **1 green bell pepper**, diced
– **1 medium zucchini**, sliced into rounds
– **1 cup cherry tomatoes**, halved
– **3 cloves garlic**, minced
– **2 tablespoons olive oil**
– **1 teaspoon ground cumin**
– **1 teaspoon ground coriander**
– **1 teaspoon dried oregano**
– **1/2 teaspoon smoked paprika** (optional)
– **Salt and pepper**, to taste
– **Fresh parsley**, chopped (for garnish)
– **1 tablespoon lemon juice** (optional, for extra brightness)

### Instructions:

1. **Prepare the Vegetables**:
– Start by chopping the onion, bell peppers, zucchini, and halving the cherry tomatoes. Set them aside.

2. **Cook the Ground Beef**:
– In a large skillet or pan, heat **1 tablespoon of olive oil** over medium-high heat.
– Add the ground beef to the pan, breaking it up with a wooden spoon as it cooks. Season with a pinch of **salt** and **pepper**. Cook the beef until it’s browned and cooked through, about **6-8 minutes**.
– Once the beef is fully cooked, transfer it to a plate and set aside.

3. **Sauté the Vegetables**:
– In the same skillet, add **1 tablespoon of olive oil**. Heat over medium heat.
– Add the chopped onions and cook for **2-3 minutes**, or until they begin to soften.
– Add the diced bell peppers and zucchini to the skillet, and cook for another **4-5 minutes** until the vegetables are tender.

4. **Add Garlic and Spices**:
– Stir in the minced **garlic**, **cumin**, **coriander**, **oregano**, and **smoked paprika** (if using). Cook for an additional **1-2 minutes**, allowing the spices to bloom and release their aromatic flavors.

5. **Combine the Beef and Tomatoes**:
– Return the cooked ground beef to the skillet. Add the halved **cherry tomatoes** and stir to combine all ingredients. Cook for another **3-4 minutes**, allowing the tomatoes to soften and release their juices.

6. **Adjust Seasonings**:
– Taste the dish and adjust the seasonings with more salt, pepper, or spices as desired. If you like, squeeze **1 tablespoon of lemon juice** over the top for added freshness and brightness.

7. **Garnish and Serve**:
– Once the vegetables are tender and the beef is heated through, remove the skillet from the heat.
– Garnish with freshly chopped **parsley** for a pop of color and flavor.
