Instructions:
- Prep the Meatloaf Mixture:
In a large bowl, combine ground beef, eggs, milk, breadcrumbs, chopped onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until everything is just combined — don’t overwork it. - Shape and Place:
Form the mixture into a loaf shape and place it into the bottom of your crock pot. (You can line the crock pot with parchment paper or foil for easier removal, but it’s optional.) - Add Topping:
Spread a layer of ketchup (or your favorite glaze) over the top of the loaf for extra flavor and that classic meatloaf finish. - Cook Low and Slow:
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the internal temperature reaches 160°F (71°C). - Let It Rest:
Once done, let the meatloaf rest for 10 minutes before slicing to help it hold its shape.
Optional Add-ons:
- Swap ketchup for BBQ sauce or a mix of ketchup and brown sugar for a sweet glaze.
- Add chopped bell peppers or shredded carrots for extra texture and nutrition.
Serve it up with mashed potatoes, green beans, or a simple salad — and get ready for second helpings. Because let’s be honest, this meatloaf doesn’t last long.
