👩🍳 How to Make Spicy Fried Catfish
1. Marinate the Fish
In a shallow dish, mix the buttermilk and hot sauce. Add the catfish fillets, turning to coat. Let them soak for 15–30 minutes to tenderize and infuse flavor.
2. Mix the Coating
In a separate bowl, combine cornmeal, flour, and all the spices: paprika, cayenne, garlic powder, onion powder, salt, and pepper.
3. Heat the Oil
In a deep skillet or cast-iron pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
4. Dredge and Fry
Remove each fillet from the buttermilk, letting the excess drip off. Dredge in the cornmeal mixture, pressing lightly to coat evenly.
Fry 1–2 fillets at a time for about 3–4 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.
5. Serve Hot
Serve with lemon wedges, tartar sauce, and your favorite Southern sides—think coleslaw, hush puppies, or mac and cheese.
🔥 Tips & Variations
- Adjust the heat: Use less cayenne or skip the hot sauce if you prefer a milder version. Or add chili flakes for more fire!
- Want an extra-crispy crust? Double dip: dredge, dip again in buttermilk, and dredge once more.
- No catfish? Try this with tilapia, cod, or haddock.
