### Step 2: Sauté the Spinach
In a large pan, heat the **olive oil** over medium heat. Add the **minced garlic** and sauté it for about 1 minute until fragrant. Then, add the fresh spinach to the pan, stirring frequently until it wilts down. This should only take about 3-4 minutes.
If you’re using frozen spinach, make sure to thaw it first and squeeze out any excess water to avoid watery lasagna. Once the spinach is cooked, season it with a pinch of **salt** and **pepper**. Set the cooked spinach aside to cool slightly.
### Step 3: Prepare the Cheese Mixture
In a large mixing bowl, combine the **ricotta cheese**, **shredded mozzarella**, and **grated Parmesan cheese**. Add the **salt**, **pepper**, and **optional ground nutmeg** for a subtle hint of warmth. Mix well to combine the cheeses and seasonings.
Add the **cooked spinach** to the cheese mixture and stir until everything is evenly incorporated. You want the spinach to be well-distributed throughout the cheese, so it will be present in every bite of the lasagna. Set the cheese and spinach mixture aside.
