For the steak & marinade:

  • 1 lb (450g) flank steak or skirt steak
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For the fajita veggies:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium red onion, sliced
  • 1 tablespoon olive oil
  • Salt and pepper

For the rice:

  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 1 tablespoon lime juice (optional)
  • 2 tablespoons chopped cilantro (optional)
  • Salt to taste

Optional toppings:

  • Sour cream
  • Shredded cheese
  • Avocado or guacamole
  • Salsa or pico de gallo
  • Warm tortillas

1. Marinate the Steak

In a bowl or resealable bag, combine olive oil, lime juice, soy sauce, garlic, and spices. Add the steak and coat evenly. Let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator for best flavor.

2. Cook the Rice

While the steak marinates, cook the rice:

  • Bring 2 cups of water or broth to a boil.
