This dessert is the perfect balance of juicy, ripe strawberries and a buttery, flaky crust, topped with a smooth glaze that ties everything together. Whether you’re hosting a summer gathering or simply treating yourself to something delicious, this fresh strawberry pie is sure to become your new go-to recipe.
Why This Fresh Strawberry Pie is the Best
There are many ways to make a strawberry pie, but this recipe stands out for several reasons:
- Fresh, In-Season Strawberries: The key to a perfect strawberry pie is using fresh, ripe strawberries. When in season, strawberries are naturally sweet and juicy, making them the star of this dessert.
- No Gelatin, No Jello: Unlike some strawberry pies that use artificial gelatin or Jello mixes, this recipe uses real strawberries to create a natural, fresh flavor.
- Perfect Balance of Sweet and Tart: The glaze provides just the right amount of sweetness, while the strawberries retain a slight tartness, creating the perfect balance in each bite.
- Easy to Make: With simple ingredients and a straightforward process, this pie can be made by even beginner bakers. The result? A delicious homemade treat that looks as good as it tastes!
Ingredients You’ll Need
- For the Pie Crust:
- 1 pre-made pie crust (or homemade if you prefer)
- 1 tablespoon of sugar (optional, for a slightly sweetened crust)
- For the Strawberry Filling:
- 1 ½ pounds of fresh, ripe strawberries (about 3 cups), hulled and halved
- ½ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- A pinch of salt
- For the Glaze:
- 1 cup strawberry juice (you can extract this from the mashed strawberries)
- 2 tablespoons cornstarch
- 2 tablespoons water
- 3 tablespoons honey or additional sugar (optional, depending on your sweetness preference)
Instructions
1. Prepare the Pie Crust
If you’re using a pre-made pie crust, follow the instructions on the package. If you prefer homemade, prepare your favorite pie dough and press it into a 9-inch pie pan. You can use a fork to poke a few holes in the bottom to prevent bubbling during baking.
Bake the crust according to the instructions, or if you’re using a homemade crust, bake it at 375°F for about 10-12 minutes, or until golden brown. Let the crust cool completely before filling.
2. Make the Strawberry Filling
While the pie crust is cooling, prepare the filling. In a medium saucepan, combine ½ cup of sugar, 1 tablespoon of cornstarch, and a pinch of salt. Stir in 1 cup of strawberry juice (you can create this by mashing half of the strawberries in a bowl).
Cook over medium heat, stirring constantly until the mixture begins to thicken and bubble. Once thickened, remove the saucepan from the heat and stir in the lemon juice and vanilla extract. Let the glaze cool for a few minutes.
3. Prepare the Strawberries
While your glaze is cooling, hull and slice the remaining strawberries in half. Set aside.
