Ingredients

For the Fries:

  • 4 large russet potatoes (or frozen fries, if you prefer convenience)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional)

For the Toppings:

  • 2 cups shredded cheddar cheese (or a blend of cheddar and mozzarella for extra gooeyness)
  • 1 cup cooked bacon, crumbled (or use bacon bits)
  • 1 small red onion, finely diced
  • 1/2 cup sour cream
  • 2 tablespoons chives, chopped (or green onions)
  • 1/2 cup jalapeños, sliced (optional, for a spicy kick)
  • 1/2 cup sliced olives (optional)
  • 1 tablespoon hot sauce (optional for extra flavor)

For the Sauce (Optional but Highly Recommended):

  • 1/2 cup ranch dressing (for a creamy contrast)
  • 2 tablespoons sriracha or hot sauce (for a spicy twist)
  • 1 tablespoon honey (to balance the heat)

Instructions

Step 1: Prepare the Fries

If you’re using fresh potatoes, start by washing and peeling them (peeling is optional). Cut the potatoes into thin strips, about 1/4-inch thick, to ensure they cook evenly and crisp up nicely.

Preheat your oven to 425°F (220°C). Place the potato strips on a baking sheet, drizzle with olive oil, and season with salt, pepper, and garlic powder (if using). Toss to coat the potatoes evenly.

Bake for 25-30 minutes, flipping the fries halfway through, until they are golden brown and crispy. If you’re using frozen fries, follow the package instructions for baking.

Step 2: Prepare the Toppings

While the fries are baking, get your toppings ready. Cook the bacon until crispy and crumble it into small pieces. Dice the red onion, slice the jalapeños (if you’re using them), and chop the chives or green onions.

If you’re making a sauce, mix the ranch dressing, sriracha (or hot sauce), and honey in a small bowl until well combined. Set the sauce aside for drizzling later.

Step 3: Assemble the Ultimate Loaded Fries

Once the fries are crispy and golden, remove them from the oven and immediately sprinkle the shredded cheddar cheese evenly over the hot fries. Return the fries to the oven for 3-5 minutes, or until the cheese has melted and is bubbling.

While the cheese is melting, drizzle some ranch sauce over the fries, if using. Once the cheese is melted, remove the fries from the oven and start loading them up with your toppings. Sprinkle on the crumbled bacon, diced red onion, sliced jalapeños, and olives. Finish with a dollop of sour cream and a sprinkle of chopped chives or green onions.
