Ingredients You’ll Need:

For the Crust:

  • 1 1/2 cups graham cracker crumbs (or use reduced-fat graham crackers)
  • 1/4 cup sugar (you can substitute with a sugar alternative if preferred)
  • 1/4 cup light butter or margarine, melted

For the Filling:

  • 3 (8 oz) packages of reduced-fat cream cheese (softened)
  • 1 cup non-fat Greek yogurt (a healthier alternative to sour cream)
  • 1/2 cup granulated sugar (or your preferred sugar substitute)
  • 2 teaspoons vanilla extract
  • 3 large eggs (beaten)
  • 1/4 cup of all-purpose flour (or a flour substitute for a gluten-free version)

Optional Topping:

  • Fresh berries (strawberries, blueberries, raspberries)
  • Sugar-free fruit preserves or a drizzle of honey

Instructions:

1. Prepare the Crust:

  1. Preheat your oven to 325°F (163°C).
  2. In a medium-sized bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan, creating an even crust layer.
  4. Bake the crust for about 10 minutes, then remove it from the oven and let it cool while you prepare the filling.

2. Make the Filling:

  1. In a large mixing bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer.
  2. Add the non-fat Greek yogurt, sugar, and vanilla extract. Continue mixing until well incorporated and smooth.
  3. Beat in the eggs, one at a time, making sure each egg is fully combined before adding the next one.
  4. Add the flour (or flour substitute) and mix until the batter is smooth and creamy.

3. Assemble the Cheesecake:

  1. Pour the cream cheese filling over the prepared graham cracker crust in the springform pan.
  2. Smooth the top with a spatula, making sure the filling is evenly spread.
  3. Bake the cheesecake for 45-50 minutes, or until the edges are lightly browned, and the center is mostly set but still a little jiggly.
  4. Once baked, turn off the oven and allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour. This helps prevent cracking.

4. Chill and Serve:
