Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped

- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth

- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup spinach or kale, chopped (optional)

Instructions:
Step 1: Prepare the Vegetables
Start by washing, peeling, and chopping all the vegetables. The more uniform the pieces, the better they will cook evenly. This includes your carrots, celery, zucchini, potato, and onion.
Step 2: Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until they soften and become fragrant. This step helps release the flavors and forms the base of your soup.
Step 3: Add the Vegetables
