– Salt and pepper, to taste
– 1 tablespoon lime juice
– 1 tablespoon fresh cilantro, chopped (optional)

**For the quesadillas:**
– 4 large flour tortillas (or your favorite tortilla variety)
– 2 cups shredded Monterey Jack cheese (or a blend of Monterey Jack and cheddar)
– 1/2 cup red bell pepper, thinly sliced
– 1/2 cup green bell pepper, thinly sliced
– 1/4 cup red onion, thinly sliced
– 1/2 cup corn kernels (fresh, frozen, or canned)
– 1/4 cup fresh cilantro, chopped
– 1 tablespoon butter (for grilling the quesadillas)

**Optional toppings:**
– Sour cream
– Salsa or pico de gallo
– Guacamole
– Jalapeño slices (for extra heat)

## Instructions:

### Step 1: Season and Cook the Steak

Start by preparing the steak. If using flank steak or sirloin, make sure to trim any excess fat. In a small bowl, mix together the cumin, chili powder, smoked paprika, garlic powder, salt, and pepper. Rub this spice mixture all over the steak for an even coating.

In a large skillet or grill pan, heat the olive oil over medium-high heat. Once the oil is hot, add the steak and cook for about 4-5 minutes per side, or until it reaches your desired level of doneness (for medium-rare, aim for an internal temperature of 130°F, and for medium, 140°F).

Once cooked, remove the steak from the pan and let it rest for 5 minutes. After resting, thinly slice the steak against the grain into bite-sized pieces. Drizzle with lime juice and sprinkle with fresh cilantro (if desired).
