Ingredients:

For the Chicken Kabobs:

  • 2 boneless, skinless chicken breasts (cut into bite-sized cubes)
  • 1 red bell pepper (cut into chunks)
  • 1 yellow bell pepper (cut into chunks)
  • 1 small red onion (cut into wedges)
  • 1 zucchini (cut into thick slices)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges (for serving)

For the Marinade (Optional, but highly recommended for extra flavor):

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 tablespoon honey (optional for a touch of sweetness)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

1. Prepare the Marinade (Optional but Flavorful):

If you have a bit of extra time, marinate your chicken to enhance its flavor. In a bowl, combine olive oil, lemon juice, ground cumin, paprika, honey, salt, and black pepper. Add the cubed chicken to the marinade, making sure each piece is well-coated. Let it marinate for at least 30 minutes (or up to 2 hours) in the fridge. If you’re in a rush, you can skip this step and proceed directly to seasoning the chicken.

2. Prepare the Vegetables:

While the chicken is marinating, prep your veggies. Cut the bell peppers, onion, and zucchini into large chunks or wedges. This ensures they cook evenly alongside the chicken in the air fryer.

3. Assemble the Kabobs:

Thread the marinated chicken pieces and vegetables onto skewers, alternating between chicken, bell peppers, onion, and zucchini. Be sure to leave a little space between each piece to allow air to circulate and ensure even cooking.
