What is Radicchio?

Ingredients (Serves 2–4)
- 2 heads of radicchio
- 2–3 tablespoons olive oil
- Salt and freshly ground black pepper
- Optional: balsamic vinegar, grated Parmesan cheese, garlic, or herbs like thyme or rosemary
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prep the Radicchio
Cut each radicchio into halves or quarters (depending on size), leaving the core intact so the wedges stay together. Rinse and pat dry.
3. Season
Place the radicchio wedges on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. If using herbs or garlic, scatter them over now.
4. Roast
Bake for 15–20 minutes, flipping once halfway through. The leaves should be slightly crispy on the edges and tender in the middle.
