Black Pepper Chicken with Mushrooms Recipe

Ingredients:
- 2 chicken breasts, boneless and skinless, thinly sliced
- 1 tablespoon vegetable oil (or olive oil)
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (button or cremini mushrooms work best)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional, for added umami flavor)
- 1 tablespoon rice vinegar (or white vinegar)
- 2 teaspoons freshly ground black pepper (adjust to taste)
- 1 teaspoon sugar
- ½ cup chicken broth (or water)
- 2 teaspoons cornstarch (optional, for thickening)
- Salt to taste
- Green onions, sliced (for garnish)
- Cooked rice or noodles (for serving)
Instructions:
1. Prepare the Chicken:
- Start by slicing the chicken breasts into thin strips or bite-sized pieces, ensuring even cooking.
- Season the chicken with a pinch of salt and set it aside while you prep the other ingredients.
2. Sauté the Aromatics:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the onion and sauté for 2-3 minutes until softened and slightly golden.
- Add the garlic and sauté for another 30 seconds until fragrant.
3. Cook the Chicken:
- Increase the heat to high and add the seasoned chicken to the pan. Sauté for about 4-5 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Remove the chicken from the pan and set it aside.
4. Cook the Mushrooms:

- While the mushrooms are cooking, in a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, sugar, and chicken broth. Stir to combine.
- Add the sauce mixture to the pan with the mushrooms, bring it to a simmer, and cook for 2-3 minutes to let the flavors meld together.
6. Combine Chicken and Sauce:
- Return the cooked chicken to the pan with the mushroom sauce. Stir everything together so the chicken is well-coated in the sauce.
