  • Black Pepper Chicken with Mushrooms Recipe

Now, let’s get cooking! Here’s a simple recipe that will bring big flavors to your dinner table.

    Ingredients:

    • 2 chicken breasts, boneless and skinless, thinly sliced
    • 1 tablespoon vegetable oil (or olive oil)
    • 1 medium onion, thinly sliced
    • 2 cloves garlic, minced
    • 8 oz mushrooms, sliced (button or cremini mushrooms work best)
    • 2 tablespoons soy sauce
    • 1 tablespoon oyster sauce (optional, for added umami flavor)
    • 1 tablespoon rice vinegar (or white vinegar)
    • 2 teaspoons freshly ground black pepper (adjust to taste)
    • 1 teaspoon sugar
    • ½ cup chicken broth (or water)
    • 2 teaspoons cornstarch (optional, for thickening)
    • Salt to taste
    • Green onions, sliced (for garnish)
    • Cooked rice or noodles (for serving)

    Instructions:

    1. Prepare the Chicken:

    • Start by slicing the chicken breasts into thin strips or bite-sized pieces, ensuring even cooking.
    • Season the chicken with a pinch of salt and set it aside while you prep the other ingredients.

    2. Sauté the Aromatics:

    • Heat vegetable oil in a large skillet or wok over medium-high heat.
    • Add the onion and sauté for 2-3 minutes until softened and slightly golden.
    • Add the garlic and sauté for another 30 seconds until fragrant.

    3. Cook the Chicken:

    • Increase the heat to high and add the seasoned chicken to the pan. Sauté for about 4-5 minutes, stirring occasionally, until the chicken is browned and cooked through.
    • Remove the chicken from the pan and set it aside.

    4. Cook the Mushrooms:

    • In the same pan, add the sliced mushrooms. If needed, add a little more oil.
    • Sauté the mushrooms for about 5 minutes, or until they’re tender and have released their moisture.

    5. Make the Sauce:

    • While the mushrooms are cooking, in a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, sugar, and chicken broth. Stir to combine.
    • Add the sauce mixture to the pan with the mushrooms, bring it to a simmer, and cook for 2-3 minutes to let the flavors meld together.

    6. Combine Chicken and Sauce:

    • Return the cooked chicken to the pan with the mushroom sauce. Stir everything together so the chicken is well-coated in the sauce.
    • Add the freshly ground black pepper and taste. Add more pepper if you want extra heat and flavor.
