For the meatloaf:

  • 2 lbs ground beef (85% lean works great)
  • 1 cup breadcrumbs (plain or Italian-style)
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2–3 cloves garlic, minced
  • ½ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tbsp ketchup or tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme or parsley (optional)

For the glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard or yellow mustard
  • Optional: a splash of vinegar for extra tang
