Keto Doner Kebab (Zero Carbs!) – A Flavor-Packed Low-Carb Favorite

If you’re following a keto lifestyle, you know that finding bold, satisfying meals without carbs can sometimes feel limiting. But here’s some delicious news: you can now enjoy the rich, spiced flavor of your favorite takeaway with this Keto Doner Kebab recipe — completely zero carbs!

That’s right — no pita, no sugary sauces, and no fillers. Just tender, seasoned meat packed with flavor and perfect for meal prep, wraps, bowls, or salads. This recipe recreates the magic of the traditional Turkish doner kebab with a keto-friendly twist.

🥙 What Is Doner Kebab?

Doner kebab is a Turkish dish made by stacking seasoned meat on a vertical rotisserie and slow-cooking it to juicy perfection. It’s typically served in flatbread or pita with sauces and vegetables. While delicious, the bread and sauces in a traditional kebab are loaded with carbs — not ideal for keto eaters.

This keto version strips out the carbs without sacrificing flavor. We use a spiced ground meat mixture, bake it in the oven, then slice it thin just like the real thing.

🧄 Keto Doner Kebab (Zero Carbs) Recipe

🍽 Servings: 4–6

⏱ Prep Time: 10 minutes

⏱ Cook Time: 45–50 minutes

🛒 Ingredients:

  • 1 lb (450g) ground beef (80/20)
  • 1 lb (450g) ground lamb (or all beef if preferred)
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp cayenne pepper (optional, for heat)
  • ½ tsp dried oregano
  • ¼ tsp ground cinnamon (optional, for a subtle authentic twist)

🔪 Instructions:

  1. Preheat Oven to 375°F (190°C)
Line a loaf pan with parchment paper or lightly grease it with olive oil.
  2. Mix the Meat and Spices
In a large bowl, combine all the ingredients. Mix thoroughly with your hands or a stand mixer for 2–3 minutes until the mixture becomes tacky. This step is crucial for binding the meat and getting the classic doner texture.
  3. Pack and Shape
Firmly press the meat mixture into the loaf pan to eliminate air pockets. You want it compact and tight so it holds together when sliced.
  4. Bake
Place in the oven and bake for 45–50 minutes, or until the internal temperature reaches 160°F (71°C). For a crispier outside, broil the top for an extra 2–3 minutes at the end.
  5. Rest and Slice
Let the loaf rest for 10 minutes before slicing. Use a sharp knife to slice thin strips — just like classic doner meat!
