Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs (or digestive biscuits, crushed)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- Pinch of salt
For the Lemon Filling:
- 8 oz (1 package) cream cheese, softened
- 1 cup sweetened condensed milk
- 1/2 cup freshly squeezed lemon juice (about 3-4 lemons)
- Zest of 2 lemons
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream (optional, for added richness)
For Garnish:
- Lemon slices or zest
- Fresh mint (optional)
Instructions:
Step 1: Prepare the Crust
In a medium-sized bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and a pinch of salt. Mix until the crumbs are evenly coated with butter and the mixture holds together when pressed.
Press the crumb mixture firmly into the base and up the sides of a tart pan (about 9 inches in diameter) or a pie dish. Use the back of a spoon or your fingers to make sure it’s compact and evenly distributed. Place the crust in the refrigerator to set for about 20-30 minutes while you prepare the lemon filling.
